This really simple pasta sauce is a great recipe to have in your repertoire. It is so versatile and can be used for a variety of things.
It makes the perfect base for Baked Beans and is amazing when used in Zucchini Parmigiana or Zucchini, Mozzarella and Tomato Stacks.
You could add vegetables to this sauce if you wanted, mushrooms and zucchini are great. But it is just as delicious simply tossed through pasta.
SERVES 4
2 cloves garlic, finely chopped
2 tbs olive oil
2 x 400g tins chopped tomatoes
A small handful of parsley, roughly chopped
A small handful of basil, roughly chopped
1 ½ tsp sugar
1 tsp chilli flakes (optional)
Salt and pepper to taste
Heat olive oil in a small saucepan and add the garlic, tossing around for about 30 seconds to one minute, until fragrant.
Add the tinned tomatoes, parsley, basil, sugar, salt and pepper and stir. Bring this to a slow boil and then turn down the heat to the lowest setting and simmer for 45 minutes, stirring occasionally.
Serve tossed through pasta with some grated parmesan sprinkled on top.
